In TV/book canon, there is a set text and authorial/actor/director intentions all over it in a very explicit way - you can disagree with it and argue with it and critique it, but it is a finite thing. / EXACTLY. bless you, that's exactly it!!! <3 headcanons are a thing yes and how we interpret art is subjective but at the end of the day, there is a contained canon in TV/books.
100% agree with everything you said about RPF too. there really is SO MUCH room for interpretation. and that's it, that's what makes it fun for me. it's why I'm so drawn to actual characterization that relies on their personalities/personas and don't care much about stories that are too ooc - the fun is in all the interpretation and all the filtering of a whole bunch of variables that goes into it :')
